Ingredients

1 cupquinoa or barley
10 ozkale or parsley
1/2red onion
6 stalksgreen onion
15 ozblack beans
15 ozchickpeas
100 gfeta
salt
pepper
cumin
lemon
cayenne pepper
chili pepper

Directions

  1. Make quinoa according to instructions, set aside
  2. Rinse greens (parsley or kale or spinach)
    1. Remove stems, chop
  3. Heat pan, add olive oil, add 1/4 greens and some water
    1. Add more water until all the greens are added and hydrated
    2. Be careful not to burn though
  4. Add chick peas to pan, heat for a few minutes
    1. Add black beans and quinoa, heat for a few minutes
    2. Add chopped onions
    3. Add spices and stir, lowering heat
  5. Add feta, lemon, and extra olive oil if desired, and serve
