1/2 cuprice, uncooked
2 Tbspolive oil
1medium onion, diced
1 Tbsptomato paste
1 clovegarlic, minced
1 lbsground beef
14 ozdiced tomatoes
1 tsporegano
6bell peppers, topped and cored
1 cupcheddar, grated
kosher salt
parsley, freshly cut


  1. Preheat oven to 400 F
  2. In a small saucepan, prepare rice according to instructions
  3. In a large skillet over medium heat, add oil, saute onion
    1. Add tomato paste and garlic, cook until fragrant
  4. Add ground beef to skillet, cook
    1. Once cooked through, drain
    2. Return beef to skillet, add rice, tomatoes, oregano, salt, pepper
    3. Simmer for near 5 minutes
  5. Place peppers cut side up in baking dish, drizzle with oil
    1. Spoon beef and rice mixture into each pepper, top with shredded cheese
    2. Cover baking dish with foil
  6. Bake peppers until tender, about 30 min
    1. Uncover and bake until cheese is melted and bubbly, about 10 min
  7. Garnish with parsley, serve
